Maybe this sounds silly to be asking. But I just bought a new set of pots after many years with my old set. The new one has a vent in the lid. When would this be used? Maybe I'm just not a great cook, but I always thought either you cover a pot entirely to leave the steam in, or leave it uncovered. What benefit is the vent, if any?
